Build, fill glass with ice
2 oz dark rum (6 cl)
1 oz fresh lemon juice (3 cl)
1 tsp sugar (4 dashes)
¾ oz pineapple juice (2 cl)
¾ oz water (2 cl)
(Substitute hot water for ice add 1 pat of butter) (½ oz, 1.5 cl)
Serve in a highball glass (9.0 oz)
