The original apparatus for mixing a cocktail: stirring with ice. The ingredients and ice go in the bar glass, and the spoon is used to agitate or twirl the ice through the ingredients over ten to twenty seconds, chilling and diluting the drink without the undue aeration shaking can cause. Traditionally, drinks containing only spirits, wines, non-opaque liqueurs, and bitters are stirred. Beverages which add fruit juices and dairy products to that mix are, instead, shaken.
