Plum And Lemon Thyme Apéro

Stir in mixing glass with ice, then add the soda water and gently stir again

2 oz fino sherry (6 cl)

1 oz plum purée (3 cl)

1 oz soda (3 cl)

Garnish with 2 sprigs lemon thyme

Serve in a wine glass (8.0 oz)
